Ingredients (for ~20 macarons)

Shells

  • 125 g almond flour
  • 200 g icing sugar
  • 3 egg whites
  • 30 g sugar
  • Food coloring

Ganache / filling

  • 200 g white chocolate
  • 100 ml heavy cream
  • Flavorings
     

Preparation of the shells

  • Beat the egg whites until stiff peaks form, gradually adding the sugar.
  • Gently fold in the almond flour and icing sugar mixture.
  • Sift the almond flour and icing sugar.
  • Divide the batter into three bowls and add the colorings:
    • Green → pistachio macarons
    • Red → strawberry macarons
    • Yellow → lemon macarons
  • Pipe the macarons onto a baking tray using a piping bag.
  • Let them rest for 20 minutes.
  • Bake for 12 minutes at 150°C.
