
Ingredients (for ~20 macarons)
Shells
- 125 g almond flour
- 200 g icing sugar
- 3 egg whites
- 30 g sugar
- Food coloring
Ganache / filling
- 200 g white chocolate
- 100 ml heavy cream
- Flavorings

Preparation of the shells
- Beat the egg whites until stiff peaks form, gradually adding the sugar.
- Gently fold in the almond flour and icing sugar mixture.
- Sift the almond flour and icing sugar.
- Divide the batter into three bowls and add the colorings:
- Pipe the macarons onto a baking tray using a piping bag.
- Let them rest for 20 minutes.
- Bake for 12 minutes at 150°C.
Preparation of flavored ganaches
- Heat the cream and pour it over the white chocolate. Mix, then divide into three parts:
- add a few drops of lemon flavoring
- add a few drops of strawberry flavoring
- add a few drops of pistachio flavoring
- Let cool, then fill the macarons.
